Ingredients:
- 225g pasta (penne or rotini)
- 2 cups small broccoli florets
- 2 cups milk (dairy or unsweetened plant)
- ½ cup Greek yogurt or cottage cheese
- ½ cup grated parmesan or vegan parm
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- Salt & pepper, to taste
- Chopped parsley and extra parmesan for garnish
Instructions:
- Boil pasta in salted water per package, add broccoli in last 2 min of cooking, drain.
- In same pot, add olive oil, sauté garlic 1 min.
- Stir in milk, yogurt, cooked pasta & broccoli, half the cheese, salt & pepper. Simmer 2 min till thick and creamy.
- Serve with parsley, more parmesan, and cracked pepper.
