Ingredients:

  • 225g pasta (penne or rotini)
  • 2 cups small broccoli florets
  • 2 cups milk (dairy or unsweetened plant)
  • ½ cup Greek yogurt or cottage cheese
  • ½ cup grated parmesan or vegan parm
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • Salt & pepper, to taste
  • Chopped parsley and extra parmesan for garnish

Instructions:

  1. Boil pasta in salted water per package, add broccoli in last 2 min of cooking, drain.
  2. In same pot, add olive oil, sauté garlic 1 min.
  3. Stir in milk, yogurt, cooked pasta & broccoli, half the cheese, salt & pepper. Simmer 2 min till thick and creamy.
